Let’s face it. When children hear the word “healthy” to describe food, they automatically think it’s not going to taste good. Maybe it’s about time to show the little ones how nutritious ingredients like tofu, broccoli and oatmeal can be used to make delicious snacks.

Here are some recipes that are simple enough for kids to help mom make, or even make on their own.


Baked Tofu Tenders with Garlic Aoili

Crispy is the magic word when it comes to picky eaters. Tofu is one ingredient that can be made yummy (and crispy!) very easily. The fact that it’s a great source of protein and contains nine of the essential amino acids is just a plus. Follow these six steps and involve the young ones by letting them help measure and bread their own cut of tofu.

Ingredients

2 blocks extra-firm tofu

3 eggs

2 cups panko breadcrumbs

2/3 cup cornstarch

1 teaspoon vegetable oil

¾ cup mayonnaise

3 cloves garlic

2 ½ tablespoons lemon juice

Salt and pepper to taste

Directions

  1. Preheat the oven to 220°C and line a baking sheet with some oil.
  2. Drain the tofu of its water and cut each of the blocks to eight equal pieces measuring ½ inch thick each. You should have a total of 16 pieces. Blot the pieces dry, gently squeezing out as much moisture as possible. Sprinkle salt on each side and leave to absorb.
  3. Crack the eggs in a bowl and flavor it with a teaspoon of salt and pepper. Put all the cornstarch on a plate. Place the panko in another bowl and season with salt and pepper.
  4. Line up the tofu, cornstarch, eggs, and panko, and place the baking sheet at the end. Coat the tofu one at a time starting with the cornstarch. Shake off any excess and dip the tofu into the bow of eggs to coat. Continue by dredging the tofu in the breadcrumb mixture, gently pressing the panko into the tofu.
  5. Place all breaded tofu on the baking pan, drizzle some oil on each piece and stick it in the oven to bake until brown and crisp for about 30 to 35 minutes.
  6. Meanwhile, combine the mayonnaise, garlic, lemon juice, salt, and pepper to create the garlic aioli dipping sauce. Serve and enjoy!

Brocolli Tots

Eating broccoli is a nightmare for most kids, and honestly, this super veggie doesn’t deserve such bad rep considering the amount of vitamins it packs within a small serving. With the help of cheese, cheese, and more cheese, the little ones should be able to forget the green “monster” they often fear. Kids can use their hands and help shape the broccoli to bite-sized tots.

Ingredients

1 bag frozen broccoli or about 300 grams fresh broccoli

2 eggs, beaten

1 cup panko breadcrumbs

1 ½ cup shredded cheddar

½ cup grated parmesan

Salt and pepper to taste

Directions

  1. Preheat the oven to 200°C. Brush some oil onto a baking sheet and line it with some parchment paper. Continue by brushing more oil onto the parchment paper.
  2. Dry the broccoli well with paper towels, and very finely chop them when dry. Transfer chopped broccoli into a bowl and combine it with the egg, bread crumbs, cheddar cheese, and parmesan. Season with salt to taste.
  3. Using a spoon, scoop some broccoli mixture into your hands and shape it into a tot. Transfer shaped tots into the baking sheet, evenly spacing between each piece, and continue with the rest of the mixture.
  4. Bake for about 20 to 25 minutes or until brown and crispy. Serve with your favorite dipping sauce.

Cauliflower Mac and Cheese

One of the most effective ways to get kids to eat their veggies is to hide it in their food. This recipe does just that. With the cauliflower sharing the same color as the cheese sauce, it will visually go undetected, making your kids absorb all that fiber without them even knowing it. This recipe may take a little bit more work, but the kids can help puree the cauliflower to save Mom a step.

Ingredients

500 grams cauliflower (cut into florets)

2 cups elbow macaroni pasta

1 ½ cups cheddar cheese

¼ cup panko breadcrumbs

1 cup milk

2 tablespoons butter

1 tablespoon flour

1 teaspoon Dijon mustard

Directions

  1. Preheat the oven to 200°C.
  2. Place the cauliflower florets into a pot of boiling water and cook until soft for about six to 10 minutes. Once cooked, drain the florets and place in a blender. Pulse until smooth.
  3. Cook the elbow macaroni in a separate pot, as instructions indicate in the pack.
  4. Meanwhile, begin to make the sauce. Melt butter in a pan, add the flour, and continue to stir for two minutes to make a roux. Add the milk little by little while continuing to whisk between each pour. Make sure to remove any lumps in the mixture before adding more milk. Follow the same process, incorporating all the milk. Take the sauce off the heat and add in the Dijon mustard and one cup of the cheese. The sauce should be thick and creamy.
  5. Combine the cauliflower puree and the sauce, adding a little more milk if it’s too thick.
  6. Mix the sauce into the drained pasta, making sure it is thoroughly coated. Transfer this into a baking dish and top off with the remaining cheese and panko breadcrumbs.
  7. Bake in the oven for 20 minutes until the top is golden brown. Serve warm.

Oatmeal Cookie Smoothie

Working from home does not necessarily mean Moms have more time on their hands. In fact, it’s even more challenging playing the role of “boss” both at the work and at home. This busy mom’s oatmeal recipe is packed with nutrients, and is a great go-to to get some goodness into the kids’ tummy before the day starts.

Ingredients

1 ½ frozen bananas

1 cup milk

½ cup oats

2 tablespoons peanut butter

1 tablespoon chia seeds

1 ½ tablespoon honey

Directions

  1. Layer all ingredients into the blender. Alternate blending between low and high speeds until all ingredients are incorporated. Blend until smooth.
  2. Pour in a glass and serve immediately. Add in a fun straw to boot!

Donut Apples

We always hear the saying “an apple a day keeps the doctor away,” and this recipe will help do just that. Let the doctors focus on their frontline battle while the rest of us think of fun, creative ways to bring healthy fruits on the dining table. Spend a crafty afternoon with the kiddos and allow them to decorate their own donut apples. Another good news? Never again will they have to choose between an apple and a donut.

Ingredients

3 apples

1 ½ cups cream cheese, softened

½ cup melted chocolate

2 teaspoon honey

1 drop pink food coloring

1 drop blue food coloring

Sprinkles for decorating

Directions

  1. Divide the cream cheese into three different bowls.
  2. In one bowl, add melted chocolate. In another, add one teaspoon honey and the pink food coloring. And in the last bowl, add remaining honey and the blue food coloring. Stir all ingredients of each bowl until fully combined.
  3. Remove the stem from the apples and slice it across, from top to bottom so that it creates round shapes. Use a cookie cutter to hollow out the core.
  4. Choose preferred cream cheese mixture and spread on apple slices. Add sprinkles to decorate.

From snacks to mains to desserts, nothing excites the whole family better than yummy treats that everyone can enjoy. It becomes even more exciting for the kids when they realize that they can be involved in the process of making them. So spend some time with the little ones and teach them these recipes that they may keep with them for many years to come.
